Stovetop percolator coffee, done right — a coarse grind, gentle heat, and a prompt pull keep this recirculating brewer from turning bitter.

Steps

    Grind 30 g of coffee coarse and add it to the percolator basket, spreading it level.

    Fill the reservoir with 450 g of water, assemble the percolator, and set it over medium heat.

  3. 3

    Once it starts percolating, keep a gentle rhythm — about one bubble in the glass knob every 2–3 seconds — for 5–7 minutes.

  4. 4

    Pull it from the heat, lift out the grounds basket so it stops brewing, and serve right away.
