Steps

    Fill the base with pre-boiled water up to just below the safety valve.

  2. 2

    Fill the basket level with medium-fine coffee — don't tamp — and assemble the pot.

  3. 3

    Set it on medium-low heat with the lid open and watch it.

  4. 4

    The moment the coffee flows and the stream turns pale and starts to gurgle, pull it off the heat and cool the base under the tap to stop extraction. Pour and serve.
