French press at home: dose, grind and brew time

Why French press still earns a place
French press is full immersion: coffee and water share the carafe until you push the mesh filter. It is affordable, full-bodied, and easy to repeat. This note deepens the recipe; the visual steps live in our French press brew guide. Whole beans and brew gear live in the TOLO shop.
What you need
- French press (glass or steel) with a clean mesh filter.
- Fresh whole-bean coffee and a grinder. Freshness logic is in our specialty whole-bean buying guide.
- Hot water and a scale if you have one (makes the cup repeatable).
Base recipe (one generous cup)
The starting point we use at TOLO:
- Dose: 15 g coffee to 250 g water (~1:16.7). Double for two cups.
- Grind: coarse, about sea-salt size (coarser than V60 or AeroPress). If the plunger fights you or the cup is muddy and bitter, open the grind - see grind science.
- Water: 93-96 C. In Toluca water boils near 91 C, so use it right off the boil. More in perfect water temperature for brewing.
- Time: 4-minute steep. Stir gently at the start, rest the lid with the plunger up, then at minute 4 press calmly (do not crush the grounds into the bottom).
- Serve: pour everything out at once. Coffee left on the grounds keeps extracting and turns bitter.

Water and standards
If the recipe is clean but the cup tastes flat or harsh, check the water. The Specialty Coffee Association publishes Coffee Standards with brewing mineralization ranges. The National Coffee Association also summarizes how to brew coffee, including the plunger method. Very soft or very hard water changes flavor more than an extra 30 seconds of steep.
Quick dial-ins
- Sour / sharp: grind a bit finer, nudge temperature up, or steep 30-45 s longer.
- Bitter / astringent: grind coarser, lower temperature, or cut to 3:30. Pour everything out immediately.
- Weak: raise dose (e.g. 17 g / 250 g) or reduce water - do not just press harder.
- Muddy: grind too fine or a damaged filter. Open the grind and clean the mesh.
