Finca San Juan del Vesubio

Yajalón, Chiapas, Mexico

Finca San Juan del Vesubio rests in the cloud forests of Yajalón, Chiapas, between 1,500 and 1,800 meters above sea level. Since 2014 the farm has been run by Elvira Trejo and Jorge Utrilla, whose family has worked with coffee for more than four generations.

The farm’s philosophy stands on three pillars: quality, sustainability, and respect for the surrounding ecosystem.

Varieties & Process

San Juan del Vesubio grows three arabica varieties — Bourbon, Obata, and Geisha — and works across washed, honey, and natural processes. Cherries are picked at 22–24° brix and dried on raised African beds.

Recognition

The farm placed second at the Yara Champion Coffee Program in 2019 with a washed Bourbon, and again in 2021 with an Obata. In 2023 it took 23rd place at Cup of Excellence Mexico with a washed Obata, scoring 87.16 and advancing to the international round.
