About Us
TOLO is a coffee roaster and two cafés in the Toluca area. We started because specialty coffee, where we lived, either felt like a club you needed a password for, or didn’t deliver in the cup. We wanted neither.
From a cart to two cafés
Before there was a shop, there was a cart. Through 2024 we showed up at events around Estado de México, learning what people in Toluca actually wanted from a cup. The first TOLO café opened on September 1, 2025. The second followed in 2026.
Specialty, without the pretense
Quality without theatre. We roast in 600-gram batches and cup every new origin before it goes on the menu. Consistency is the promise, not the performance.
Transparency by default. Every coffee on the menu lists the farm, the region, the process, and the notes you’ll find in the cup. If you’re curious, it’s all there.
Built for repeat visitors. The app is where ordering, rewards, your wallet, events, and promos live. Receipts too.
Where the coffee comes from
We work directly with producers. Today we’re pouring coffee from Finca Las Ranas — in Mecacalco, Veracruz — where Isabel Hernández, a fourth-generation producer, leads a harvest done largely by women. From Finca las Chicharras, in Ángel Albino Corzo, Chiapas — Cup of Excellence Mexico 2024 national winner. And from Finca Kalid, in Xalisco, Nayarit — the project of Gerardo Vázquez, one of Mexico’s first certified Q-graders. See the full list at Sourcing.
